Observation (CORRECTED DURING INSPECTION): A wet wiping cloth was hung over the empty sanitizer bucket by handwash station. Operator informed that the wiping cloth is used to wipe down knives.
Corrective Action(s): Directed staff to fill the sanitizer bucket and to keep the wiping cloth in the sanitizer between uses.
