-Hot holding display unit: 42 C *** Still heat increasing - just turned on unit
***Ensure hot hold unit is maintained at or above 60 C before food is placed in unit.
***Get thermometer for hot hold display unit to verify temperature.
-Handsink fully supplied with hot & cold water, liquid soap and paper towel
-Sanitizer bottle noted 100 ppm chlorine
***Ensure all chemical bottles are labelled. Label sanitizer bottle - "sanitizer" or "bleach water"
-No signs of pest activity
-Take out only
-2 comp sink available in back bakery for dishwashing
-Meat slicer in use during inspection - slicer cleaned after use each morning
-General sanitation satisfactory
