Observation (CORRECTED DURING INSPECTION): A few heads of lettuce stored directly on the wire shelves of Walk-in cooler -these shelves are not regularly cleaned and sanitized
Corrective Action(s): Discarded the outer layer of the lettuce

Do not store the vegetables directly on the shelves rather in the original boxes, bags, trays and so forth

Observation: A few open food cans in the Walk-in cooler
Corrective Action(s): Once the food cans are opened transfer any leftovers into washable containers -the open cans may start to rust and contaminate foods.

Observation: The back door to the kitchen was left wedged open the entire inspection.

This back door leads right to the dumpster area
Corrective Action(s): Keep the back main door door closed unless actively shipping goods.

NOTE: the screen door when closed has a large gap at the bottom that can permit the entry of rodents. Any gap more then 1/4" must be closed off -you will need a door sweep installed there if you will close this door instead of the main one.

Observation: Confirmed that coolers (Coleman type) being left outside next to the dumpster areas. Containers were observed open and filthy
Corrective Action(s): Clean and sanitize these coolers

Keep your food containers in a sanitary state in a clean location inside such as where you have the pots and pans in the kitchen

-wash-rinse-sanitize with bleach >100ppm chlorine residual, plug available (new sign provided, remove the old one)

Handwash sink adequately stocked and clear for use -paper towels dispensed, pumped soap

No signs of pests -Pest Check comes in monthly -last work report indicates no pest activity inside -good
