Observation (CORRECTED DURING INSPECTION): Internal temperature of whole cooked chickens in the hot case measured 54-55 degrees C.
Corrective Action(s): Reheat all chickens to 74 C in the oven and then keep them hot (internal temperature of 60 C or higher).
Chickens must be held at 60 or higher. Adjust the thermostat on the hot case so that it is capable of maintaining them at 60 C or higher at all times. (immediately)

Observation: -Do not store boxes of kale on the floor near the raw meat shelves. Ensure crates of milk and other ready to eat items are moved away from raw poultry and meat storage shelves
-Remove boxes of banana away from the mop sink. Do not store any produce items or other equiopment near the mop sink to prevent food contamination.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Food debris build up noticed along the edges of the deli cooler and floor and along the North wall and floor. Debris also observed in electrical conduit opening underneath the sandwich cooler.
Corrective Action(s): Remove all food debris and food crumbs etc. from the floor edges and cover or seal all floor wall junctions and space between deli cooler and the wall. Clean the floor drain located in front of the ice maker. Cleam floor thoroughly in the produce wash area especially underneath the produce sink and around the ice maker (By July 16, 2017).

Comments

* The bottom shelves of dry storage shelving must be at least 6 inches off the floor to allow for easy cleaning underneath. Debris build up could attract pests.
* Sandwich storage unit ( glass display cooler) in the deli registered 5.5-6 degrees C. Adjust or repair the unit so that it maintains foods at 4 C or below.
* At this time only internal cooking temps are recorded for poultry or meats. Ensure to also monitor and record hot holding temps for all hot held food including
chickens and soup.
* A new drain board or drain rack above the deli wash sink recommended to air dry equipment and utensils.
* If back door needs to be kept opened for ventilation, a screen door must be provided to prevent entry of pests.
