Observation: 5 soiled wiping rags on counters and work surfaces in kitchen with no detectable sanitizer residual.
Correction: All wiping cloth rags in use are to be stored in a container of sanitizer solution (100 ppm chlorine, 1 tea spoon of bleach per 1 litre of water).
Comments

No potentially hazardous foods observed stored at room temperature. Ensure staff return foods to refrigeration when not needed for immediate preparation.
Kitchen food warmer: inserts not overfilled with lids in place, chicken internal temp 67 C
Both steamer units in use, cooking programs in progress.
All wiping rags in use observed stored in containers of 100 ppm chlorine sanitizer solution.
Reveiwed proper handwashing method with staff.
All food items in 2 door upright cooler and walk-in cooler observed stored in properly covered containers.
Walk-in cooler - food items re-organized, raw meats stored safely below vegetables.
No food items stored in outside receiving hallway.
Required premise cleaning conducted.
Kitchen counter top cooler 4 C, lids in place, cover closed.
Strainer baskets replaced.
