Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
Observation: walk-in cooler at 9 to 10 C. Checked temp logs and morning temps checked out ok.
Correction: Move potentially hazardous foods into alternate cooling units until walk-in serviced and unit maintains proper temperatures. This willl be verified at re-inspection date noted on report.

Observation: Walk-in cooler at 9 - 10 C. Verfied product temps. too. Checked morning temp logs and unit recorded OK. Too long for defrost cycle.
Correction: Remove all potentially hazardous foods from unit and store in alternate cooling units at 4 C or less. Have unit serviced and return food to walk-in cooler only when this unit is able to maintain 4 C or less. This will be verified at follow up inspection date noted on this report.

Observation: Under counter cooler not maintaining food at 4 C. This is a re-occurance from last inspection report. Temperature of unit at 10.5 C.
Correction: Remove all potentially hazardous foods from unit until serviced by technician. Do not re-stock unit until it can maintain 4 C or less. Re-inspection needed to verify proper controls in place.

Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: Sanitizer (Quats) at source measured close to 0 ppm. Only at the edge of paper was there any measurable colour change on strips. Let system run and retested. Same results.
Sanitizer in spray bottles also measured little to no residual.
Correction: Immediately move to manual addition of Quats to water for both sinks and spray bottles. Ensure solution reaches at least 200 ppm, but can also fall within the 200 to 400 range. Service main dispenser. Re-inspection needed.
