Observation (CORRECTED DURING INSPECTION): Dairy product placed on prep cooler had internal temperature measured at 20'C. Discarded at this time.
Corrective Action(s): Ensure all cold potentially hazardous foods are stored at/below 4'C at all times. Any dairy products used for food prep must be kept in the cooler immediately after use.

301 - Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation (CORRECTED DURING INSPECTION): Facility only had a <50ppm chlorine solution available for use at this time. 200ppm chlorine solution was prepared at this time. Staff was advised to have all prep surfaces sanitized using this solution at this time.
Corrective Action(s): Ensure to have 100-200ppm chlorine solution available at all times. All prep surfaces must be sanitized before initiating any food prep in the morning, after each possible contamination and every 2 hours during operation.

Observation (CORRECTED DURING INSPECTION): Bleach bottle had <50ppm chlorine measured. 200ppm chlorine solution was prepared at this time.
Corrective Action(s): Ensure to have 100-200ppm chlorine solution available at all times. Prepare the solution by adding 1/2 tsp of bleach per 1L of water.

2) Opened can of tomato paste observed in the kitchen prep cooler.

Corrective Action(s): Ensure all foods are properly covered and contained in food grade containers. Do not store raw meat/seafood above but always away from and below ready to eat foods (i.e. cooked foods/vegetables),

Routine inspection conducted:

-Handwash stations adequately supplied with liquid soap, paper towels and hot/cold running water.
-Coolers operating below required temperature of 4'C; Freezers operating below required temperature of -18'C.
-3 compartment sink equipped properly for manual dishwashing.
-Ventilation canopy hood serviced and maintained.
-Washroom handsink satisfactory.
-No evidence of pest activity observed at this time.
-Traps in place. Professional pest control company contracted for monthly visits. Recent report kept on site.

General sanitation of the facility satisfactory. However, it could be improved by cleaning hard to reach areas on a more regular basis as discussed at this time.
NOTE: Back storage area requires reorganization/better cleaning.
