Observation (CORRECTED DURING INSPECTION): 1) Spray bottle (labelled sanitizer) at front of store did not contain sanitizer. No sanitizer present in fried chicken area. Dirty cloths noted on prep table.
2) Potato slicer not being cleaned frequently enough. Build up of food debris noted on slicer.
Corrective Action(s): 1) Ensure sanitizer solution is always present in food preparation/service areas to sanitize food contact surfaces. Store cloths in sanitizer solution.
2) Clean and sanitize slicer after use.

Comments

General sanitation is satisfactory although some attention is needed in hard to reach areas particularly under pop bib shelving and behind deep fryer.
Hot and cold running water present.
Liquid soap and paper towel present at handwashing stations and in staff washroom.
Walk-in cooler was at 3C
All freezers functioning
Small coolers in front service area at 4C
Display cooler at 1C
Hot holding of hot dogs, taquitos, pizza, and chicken >60C
Walk-in cooler at 2C
Quats sanitizer present from dispenser at 3 compartment sink at 200ppm
*Temperature record being kept, but not consistently and corrective action not being recorded when temperature requirements not met. Ensure this is addressed.
Manager reported they are in the process of removing equipment/supplies that are no longer needed.
