Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: 0 ppm chlorine detected in the final rinse of the dishwasher
Sanitizer initially not available in the spray bottle for cleaning contact surfaces
Correction: Monitoring logs not on site. Once repaired all utensils will need to be rewashed
The spray bottle was filled with the correct concentration of bealch at time of inspection.
Comments

Closure order lifted
Dishwasher repaired (Technician on site at time of reinspection). Final rinse tested at approx. 80ppm chlorine on final rinse
Glasswasher repaired. Final rinse concentration of 18ppm measured.
Hole at base of back door temporarily plugged with wire mesh to keep pests out.

***Monitoring logs must always be on site/available and readily accessible when in operation. This is to demonstrate you are doing your due diligence especially if there is a food borne illness complaint.
***Ensure staff are aware on how to properly use their iodine test kit when testing the glasswasher residual.
