Met with owner and obtained the following information:

- daily temperature logs are available and kept on site for 6 months
( coolers are at max 4C and freezer at -18C, hot holding is at 63C )
- all coolers are supplied with accurate thermometers
- high temperature dishwasher reached 90C at the final rinse
- they are including hot and cold holding equipment
- ceiling lights are covered and protected
- all food protected during display and dated
- quats measured at 200ppm in the spray bottle
- all wiping clothes are stored in the approved sanitizer and changed every two hours
- all staff have a food safe training
