Observation (CORRECTED DURING INSPECTION): In-use rice scoops stored in a container of water at room temperature.
Corrective Action(s): In-use rice scoops need to be kept below 4 degrees Celsius or higher than 60 degrees Celsius. Instructed operator to place the plastic in-use rice scoops in a container of ice water. When the ice has fully melted, it is time to change the rice scoop and container with a clean set filled with ice water. Operator corrected at time of inspection.

Observation (CORRECTED DURING INSPECTION): In-use wiping cloths not stored in sanitizer in between uses.
Corrective Action(s): In-use wiping cloths must be stored in a bucket of sanitizer in between uses to prevent bacteria from growing on them. Provide a bucket of bleach sanitizer (1 oz bleach per 4 litres of water) for the sushi bar, cook line and back preparation area. Operator corrected at time of inspection.

Observation: Mouse droppings found by back door near the chest freezers.
Corrective Action(s): Clean up the mouse droppings and sanitize the affected area. Mouse droppings were not found anywhere else and both mechanical traps and glueboards throughout the premise were in use for monitoring rodent activity.

Observation: Back door of kitchen was wide open at time of inspection.
Corrective Action(s): Keep the back door closed when not in use to prevent pest entry. If fresh air is desired, install a screen door. Operator closed the back door at time of inspection.
