Observation: High temperature dishwasher gauge showed 190 deg.F at the manifold but only 66 deg.C at the plate level.
Corrective Action: Have dish washer checked and serviced to ensure the temperature gauge is accurate
High temperature dish washers must be 182 deg.F at the manifold to reach a sanitizing temperature of 71 deg.C at the plate level. Incorrect gauge readings could lead to inadequate temperatures for sanitation
