Observation (CORRECTED DURING INSPECTION): Used egg cartons flats were being stored on the floor underneath a prep table. Cartons were being kept to place bacon strips on top to absorb excess grease after cooking.

- Do not continue this practice. Used egg cartons are not food grade material and may even contain bacteria from previously stored eggs.
- Do not store any other food contact surfaces or equipment used for cooking/preparation on the floor.

Observation: The following areas need cleaning:
- Ceiling/air vent above dishpit area heavily covered in dust
- Walls behind corner prep table by cook line has food splatter
- Food debris found underneath dry storage rack by back door
Corrective Action(s): Thoroughly clean and sanitize above mentioned areas. This will help to prevent pests and protect food from overhead contamination.

Observation (CORRECTED DURING INSPECTION): Cardboard liner was placed underneath bucket of detergent next to dishwasher meant to catch and absorb liquid/spatter.

Remove cardboard. It is not a smooth and easily cleanable surface.

**display cooler does not store food items meant for serving customers. Staff lunch items only.

- Handsink and washroom sink supplied with hot+cold water, liquid soap and paper towels.
- No obstructions to hand sink.
- High temperature dishwasher achieved 73.8C at the plate after 5 runs (55.5C, 62.4C, 67.3C, 70.3C, 73.8C) as per max/min thermometer.
- 200ppm bleach solution with wiping cloths submerged was available in sanitizer bucket.
- Vent hood was maintained in good condition - no heavy grease buildup. Operator states the grease panels are occasionally taken down for cleaning in addition to deep cleaning of the vent hood every 6 months by professional service. (Next service date: September 11, 2021.)
- Dry storage satisfactory. All items off the floor.
- Food stored in coolers/freezers were protected from contamination.
- FOODSAFE certified staff on site.
- Health permit posted in conspicuous location.
- No signs of pests at time of inspection. Pest control services are provided by the building for exterior only - operator has made all entrances pest proof.
