Observation: Door handles on all coolers and freezers were found to be filthy with grime.
Corrective Action(s): High touch areas such as door handles must be clean regularly to prevent build up of filth and prevent cross contamination. Clean and sanitize all door handles for the coolers and freezers.

Observation: Ceramic plates were used to serve food to customers at time of inspection.
Corrective Action(s): Health permit for this food premise restricts all food service to single-service utensils only. The use of ceramic dishes or other reusaable utensils for food service is not allowed without prior approval from Fraser Health. Remove all resuable food service utensils from the facility, except for those used by the operator for personal meals (i.e. 1 or 2 sets of utensils).

304 - Premises not free of pests [s. 26(a)]
Observation: Mouse droppings found on the floor in all four corners of the back room, at the corner of the floor below the front rice cooker/warmer, in the cabinet across from the donair machines, and in the cabinet for the hot water tank.
Corrective Action(s): Clean up all droppings and sanitize the affected areas. Mechanical and glue traps used to control rodent activity. Aside from traps, daily monitoring and cleaning of rodent droppings is very important.

Observation: Old cardboard boxes that were used for food were found lying outside by the back door with several flies hovering around them.
Corrective Action(s): All garbage and refuse shall be properly disposed of to prevent attracting pests.

Comments

General observations:
All coolers (prep cooler, double door cooler, drinks cooler and stand up cooler) were 4 degrees Celsius or less.
Small bar cooler beside drinks cooler was not in use and was not plugged in.
All freezers (chest freezer and stand up freezer) were -15 to -20 degrees Celsius.
Hot holding units (steamer x1 and rice cookers/warmers x2) were all over 60 degrees Celsius.
Food storage practices were satisfactory.
Organization of storage areas was satisfactory.
Hand sinks were stocked with liquid soap and paper towels.
All sinks were equipped with hot and cold running water.
Operator's hygiene and food handling practices were satisfactory.
General sanitation was satisfactory - except as noted above.
Bleach sanitizer had a chlorine concentration of 200ppm.
Chemicals were stored in a safe manner.

Discussed with operator that exhaust hood in cooking area must be turned on whenever any of the donair machines are turned on. Exhaust hood was not plugged in at the beginning of the inspection.
Noted a propane BBQ/grill outside by the back door. Operator said it is only for personal use.
Operator indicated the stand up cooler in back room (glass door) is for personal use only - at time of inspection the foods in the cooler did not appear to be associated with the business food menu.
