Observation (CORRECTED DURING INSPECTION): FSP 13-1 Display Management System Log not in use. Potentially hazardous foods (savoury buns and scones) stored at room temperature for more than 6 hours. Log states products must be discarded after 6 hours. Products were made between 6AM-7AM and inspection was conducted around 3PM.
Corrective Action(s): Follow your food safety plan by using a timer and log sheet to note the production and discard time of the ham and cheese croissants, savoury rolls and other products that can be only be left at room temperature for 6 hours. Records must be kept on-site and available for review.
Products made more than 6 hours ago were discarded by staff.

Observation: Front handwashing sink (with foot pedals) did not have hot water.
Corrective Action(s): Handwashing sinks must be supplied with hot and cold running water at all times in order to properly wash hands.
Adjust hot water valve so that there is an adequate supply of hot water at this sink. Correct immediately.
Use sink in back for handwashing in the interim.

Observation: In operator's absence, the staff on site did not have FOODSAFE Level 1 or equivalent training.
Corrective Action(s): Ensure at least one person on site has FOODSAFE Level 1 or equivalent training. Correct by August 12, 2022.

Routine Inspection

-Coolers were at 4 C or below.
-Freezer was at -15 C (should be -18 C, monitor and adjust if necessary).
-Quats in spray bottle registered at 200 ppm.
-Quats from dispenser registered at 200 ppm.
-Discussed method of manual dishwashing/cleaning-in-place with staff.
-General sanitation satisfactory. Focus cleaning efforts on hard to reach areas, behind and underneath equipment.
-Pest control services in place. Service records not available for review at time of inspection.
-Permit to Operate posted.

Some renovations made to front retail area.
Please note any changes to the food processing area must first be reviewed and approved by the health department.
