Observation (CORRECTED DURING INSPECTION): Vegetable press/slicer was observed to have accumulation of old food debris on/around the blades.
Corrective Action(s): Staff disassembled the slicer for cleaning and sanitizing at time of inspection. Ensure this piece of equipment is thoroughly cleaned and sanitized after each use.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): No food-contact surace sanitizer available for sanitizing surfaces at time of inspection.
Corrective Action(s): Staff prepared fresh solution of bleach sanitizer in a spray bottle. Ensure to mix 1/2 tsp of bleach per litre of water for proper concentrations. 100 ppm chlorine residual detected.

Observation (CORRECTED DURING INSPECTION): Staff washroom sink was missing paper towels.
Corrective Action(s): Ensure all hand washing sinks are properly supplied with hot and cold running water, liquid soap, and paper towels at all times.
Staff provided paper towel dispenser with a new roll at time of inspection.

Observation: - 2 bags of flour had been chewed through by pests.
- One bag of onions stored directly on the floor by the back door.
Corrective Action(s): - Both bags of flour discarded.
- Store all food and ingredients in pest-proof containers with proper lids.

Observation: Operator has been trying to deal with recent pest (rodent) problem. 2 bags of flour noted to be chewed through.
Corrective Action(s): - Bags of flour discarded. Ensure to store all food and ingredients in pest-proof containers with lids.
- Discard any other packages of food that have been chewed through and/or contaminated with rodent droppings.
- Contact a professional pest control company for servicing.
- Seal any potential pest entry points
- Store all food and food-related equipment at leats 6 inches above the floor and away from walls
- Remove any rodent droppings and bleach affected areas with 1000 ppm bleach solution as needed.
- Keep all doors closed at all times.

Observation: 1) Operator has been working on trying to seal pest entry points - walls around perimeter to be sealed up.
2) Back door and screen for back door were left open at time of inspection.
Corrective Action(s): 1) Continue monitoring and sealing any potential pest entry points. Use durable material such a steel wool or steel plates where possible.
2) Keep doors closed at all times. If using a screen door, the screen door must be in good condition and must not have any holes or gaps. Replace screen door.

Observation: Food/sauce spatter and debris noted on walls/backsplashes by the pizza prep cooler and in the corner by the pizza oven.
Corrective Action(s): Deep cleaning required. Ensure food prep areas are cleaned and sanitized throughout each day. Also ensure deep cleaning occurs in all areas at least once a week.

Observation: Pans of pizza dough were proofing in the connected store's storage and laundry room.
Corrective Action(s): This area of the store is not approved for food preparation. All food preparation and food handling to be done in approved kitchen areas only.

Observation: 1. Door handles of coolers. freezers not in sanitary condition; observed handles visibly soiled with grease and food debris
2. Observed pizza cutting table with cutters left on the table. Table and cutters were not cleaned at the time of inspection
Correction: Required operator to clean and sanitize all handles of all equipment. Ensure to perform thorough cleaning regularly. Required operator to wash and sanitize the cutters left on the table. When not in use, all utensils must be cleaned and sanitzed before next usage.

Comments

- Kitchen hand sink supplied with hot and cold running water, liquid soap, and paper towels.
- Three-compartment sink available for manual warewashing. Reviewed warewashing procedures with operator at time of inspection.
- All coolers were measured at 4C or colder. Freezers measured at -18C or colder.
- Dough machine was in use at time of inspection and was observed to be clean and free of old dough/flour debris.
- General sanitation satisfactory, however pest-proofing/pest control measures needed. See violations noted above.
