Observation:
Dough mixer has heavy accumulation of debris and flour.
Correction:
Clean and sanitize dough mixer. Ensure all the inside parts, mixing bowl, outside of the mixer and surrounding area is cleaned and sanitized at least within 4 hours after use. To be corrected immediately.

Follow-up Inspection:
Dough mixer and area around equipment has been thoroughly cleaned.
All food items are now covered and protected from contamination.
- items in walk-in cooler have lids and plastic wrap
- dry storage products all have lids for containers
- all flour is stored off the floor
General cleaning of facility has significantly improved, especially for the following areas:
- underneath all equipment and sinks
- door seal of walk-in cooler
- all shelving and storage areas
- front waiting area
- hard to reach areas
Sandwich cooler temperature = 3.9 degrees Celsius.
Digital thermometer of sandwich cooler has now been repaired and reading the correct temperature.
The sandwich cooler may now be used to store potentially hazardous foods.

Reminder:
Ensure to follow your sanitation plan for daily, weekly, monthly and seasonal cleaning.
Ensure to maintain temperatures of all coolers so they are 4 degrees Celsius or below.
Start temperature logs for all coolers and freezers.
