Observation: 1. Found food items were not being washed and sanitized throughout the day, (i.e. blenders and slicers)
2. Found ice machines requires cleaning on the inside to remove mildew and other large pieces of equipment need cleaning on the outside to remove flour and dough build up.
Correction: 1. Ensure all items are washed and sanitized throughout the day if in continual use (i.e. every 4 hours for cutting boards and blenders), or after each use if not used regularly. Put throughout the dishwasher.
2. Increase cleaning frequency of large pieces of equipment so a build up of flour and mildew doesn't occur
