Observation (CORRECTED DURING INSPECTION): Lid for Inserts of prep cooler was open at time of inspection. Temperature of foods in inserts 6C to 9C. No concerns with under compartment temperature 4C. No patrons noted in restaurant at time of inspection.
Corrective Action(s): Reminded operator to keep lid of prep cooler unit closed as much as possible to help maintain temperature of 4C or less for cold perishable foods.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): No sanitizer available in bar area. Only one container of sanitizer available in kitchen area. Sanitizer in kitchen area was bleaching out chlorine test strip.
Corrective Action(s): Ensure 100ppm chlorine sanitizer is readily available in all food preparation areas (bar area, cookline area and across prep sink area). Keep all wiping cloths stored in sanitizer solution when not in use to prevent microbial growth.

Observation (CORRECTED DURING INSPECTION): Noted two tongs in hand sink located across the cookline. No paper towel at hand wash station across cookline. Paper towel at bar area keeps falling out of holder when pulled.
Corrective Action(s): Ensure hand wash stations are unobstructed at all times. Operator placed paper towel at hand sink across cookline and is to look into getting a holder for the dispenser. Paper towel holder/dispenser for the bar area to be obtained.

Observation: Noted lights above dish washer area did not have a cover.
Corrective Action(s): Replace cover for lights or obtain sleeves to prevent potential contamination of foods should lights break.

Observation: Premises appears very cluttered (bar and kitchen). Some spilled food debris noted in kitchen area on shelving units under counters and on the floors.
Corrective Action(s): Do a thorough cleaning of the premises. Focus on hard to reach areas like the perimeter of the walls. Reduce clutter and organize equipment to facilitate the flow of foods.

Observation: Wood shelving units and cupboards in the kitchen and walk in cooler are worn away.
Corrective Action(s): Have shelving units finished/replaced so that they are light colored, smooth and washable finishes.

Walk in cooler 4C. Chest freezers -16C and -19C. No hot holding available at time of inspection.
Probe thermometer available on site to check internal temperature of foods. Ensure probe is sanitized between uses.
No obvious sign of pest activity noted at time of inspection. Screen door in place over open back door at time of inspection.
Lock available for storage container outside on back porch used to store onions and potatoes.
Meat slicer appeared clean at time of inspection. Operator said meat slicer is cleaned and sanitized after each use.
Ice machine appeared clean with scoop for ice stored outside of the ice in a separate container.
Low temperature dish washer had 50ppm chlorine. Test strips available.
