2. Ensure to properly air dry all equipment before putting away (i.e. bowls, pots, and rice containers should be dried upside down to allow for water to run off)

5. Found boxes for the garbage sitting on top of produce.
Corrective Action(s): 1. Must keep food 6" off the floor at all times.
2. Must ensure all food is properly covered when put away
3. Repair leak in condenser and remove ice from food items as it is not potable water, if directly on food discard food.
4. Do not place food containers directly in ice machine, scoop out ice and place into an insert for the tea to cool.
5. Do not store boxes for garbage on top of food items, keep a clear division between garbage and food items.

Corrective Action(s): Ensure a thorough cleaning is conducted of entire premises with special attention made to the above noted areas.

Observation: 1. Found broken plastic food containers being held together with duct tape
2. Cardboard boxes are being reused to hold food items in the dry storage area, and are heavily soiled with food.
3. Cardboard sitting under scale for lobster tank is heavily crusted with a white substance which is hanging over open tanks.
Corrective Action(s): 1. Do not use duct tape to repair broken equipment or containers. Discard broken equipment instead of repairing.
2. Do not reuse cardboard boxes, use reusable food grade containers that area easily washable.
3. Remove all cardboard from shelves and counters including from under scale.
