209 - Food not protected from contamination [s. 12(a)]
Observation: 1) (REPEATED VIOLATION) Used aluminum can is used as a scoop for dry goods.
2) Garbage bin is used for storing flour/starch.
3) Dirty/used rags were found at multiple food prep areas.
4) In walk-in cooler, container used for storing raw chicken was not covered and was stacked with another container containing seafood.
Corrective Action(s): 1) Do not reuse used aluminum cans. Use proper scoop with handle for food handling. Staff discarded the used aluminum can at the time of inspection.
2) Do not use garbage bins for storing food items as these bins can leach out chemicals. Use pest proof food grade container for food storage. TO BE CORRECTED BY - September 3, 2021
3) Always store rags in the sanitizer bucket when not in use. Do not leave them on prep tables. Staff removed all the rags and stored them in bleach bucket at the time of inspection.
4) Always cover the food properly to prevent the risk of food contamination. Staff discarded raw chicken during inspection.

Comments

Routine inspection conducted at the food facility and the following observations were made during the inspection:

Temperature:
- Inspection conducted during rush hour. The temperature of walk-in cooler noted at 8C at the time of inspection. The operator adjusted the temperature during inspection. Temperature logs from yesterday taken at 9:45pm showed temperature of 4C. Please ensure that door is kept closed at all times. Temperature recorded later from the thermometer stored inside walk-in cooler reads 4C.
** Always ensure that temperature of coolers are maintained at least 4C or less.
- Temperature of chest freezer at -17C.
** Thick ice build-up noted and inside surface is wearing out. Consider defrosting/service.
- Stand-up freezer at -18C.
- Prep cooler at 4C.
- Front display cooler with sweets at 4C.
- Temperature logs were maintained and found up-to-date.

Hygiene and Sanitizing:
- Hand wash station was adequately stocked with hot/cold running water, liquid soap, and single-use paper towels.
- Sanitizer pails available and the concentration of bleach noted at 200ppm.
- Low temp mechanical dishwasher present. The concentration of bleach noted at 50ppm.
- 2 compartment sink is available and maintained in good sanitary condition.
- No grease/dirt build-up observed on vents. Next service due in Feb, 2022.

Storage:
- All food items were stored at least 6" off the floor.
- Storage area was well-organized.
- Chemicals and cleaners were stored separate from food preparation areas.

Pest Management:
- No visible signs of pest activity observed at the time of inspection.
- Screen door is installed in back area and was found close.

Administrative:
- Operating permit was posted in a conspicuous location.
- Operator has valid FoodSafe Level 1 certificate.
