306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation:
1) Accumulation of dust on the ceiling around air diffusers and on electrical lines. The dust could fall into food and contaminate.

2) Food and debris found under coolers in the bar area. This will attract pests.

3) The exhaust canopy has some accumulation of food and grease. Service sticker indicates professional cleaning was due in January 2023.
Corrective Action(s):
1) Wash and clean the dust off of the mentioned areas. Increase the frequency these areas are cleaned.

2) Sweep and mop the floors, all the way to the back wall, under the coolers in the bar area. If possible, move the coolers away from walls so it is easier to clean the floor underneath them. Ensure this is being done daily.

3) Call and schedule a service and cleaning of the exhaust canopy.

Observation:
1) The wood frame, around the pass-thru window, in the dishwashing area is water damaged and is no longer sealed and cleanable. Food debris will be absorbed and attract pests. This was mentioned in the previous inspection and has NOT been addressed.

2) The wall, behind the mobile pasta machine, is damaged from the metal platform hitting it. The wall is no longer sealed or cleanable.
Corrective Action(s): 1) Replace the damaged wood frame with a material that is durable, smooth, level, sealed and cleanable.
**Correction date: June 1/23**

2) Repair the wall so it is durable, smooth, level, sealed and cleanable. It is highly recommended that a metal kickplate is installed on the wall to prevent constant damage and repair to the wall.

Comments

A routine inspection was completed:
- Coolers 4C or colder; freezers -8C or colder; and thermometers present.
- High temperature dishwasher had a rinse cycle temperature of 72.9C at the plate's surface as per max/min thermometer.
- Handwashing sink is stocked with liquid soap, paper towels, and running hot and cold water. A new cold water faucet handle has been installed, staff can easily turn the cold water on and off.
- Quats sanitizer in spray bottle had 200ppm strength. Good.
- All foods stored in food grade containers; covered; date coded; labelled; foods stored in groups with proteins separate or below RTE foods; and all foods stored off the ground.
- No expired foods in use. FIFO rules being followed.
- General sanitation level is satisfactory. Improvement needed in the mentioned areas.
- No signs of pests.
- Valid FoodSafe certified staff present.

ACTION
**Proper labels require to be placed on any retail food items (dessert) where the intent is to sell them to the public for consumption at home**. This is for trace back purposes and food allergy notifications. The labels must have the following on it:
Name of premises
Address of premises
Contact info for premises
Name of food item
Expiration date
Iingredients
Weight.

Note: The premises has a 1-compartment sink that is being used for food prep and hand washing, and it has 2-comp sink in the dishwashing area. As per current food regulations, the premises requires a separate hand sink (only for washing hands) and a 2-comp sink only for food prep. If complaints are received regarding FBI and/or lack of handwashing, and/or if during an inspection it is observed that handwashing is not being done and/or unsafe food processing is occurring....the premises will be REQUIRED to upgrade to the current standards.
