-All cooling units, walk-in cooler and prep cooler at 4C or below.
-All hot held items contained at 60C or above.
-All sani buckets, spray bottles, and dispenser measured 200 ppm Quats.
-High temp dishwasher registered 74C at plate level during final rinsing cycle
-General sanitation is satisfactory

Sandwich prep cooler is now installed with acrylic lid.
