Observation:
Observation #1: Low-temperature dishwasher maximum temperature reached was 101F. The manufacturer label indicates that 120F is required to wash dishware. At 120F, dirt and grease will break down and allow the chlorine sanitizer to work more effetively [Date to be corrected by: January 14, 2019]
Observation #2: Low-temperature dishwasher temperature dial is broken. The operator cannot visually determine the temperature at which the dishwasher is operating, and therefore could not see that the dishwasher was failing. [Date to be corrected by: January 14, 2019]
Corrective Action(s):
Corrective Action #1: Repair the dishwasher such that it will reach 120F.
Corrective Aciton #2: Repair the temperature dial on the dishwasher.

Observation (CORRECTED DURING INSPECTION): Single-use salad containers are washed and re-used for storing restaurant food items. These containers are not designed to be repeatedly washed and re-used as they are of a low-grade plastic. Operator discarded the salad containers.
