Observation (CORRECTED DURING INSPECTION): 1) Rodent droppings found on counter where plates for lunch are stored.
CORRECTED DURING INSPECTION - unit sanitized and all dishes washed in dishwasher
2) Rodent droppings found on bottom area of grill shelving unit

Observation: An additional rodent found in trap on floor in plating area.

Corrective Action(s): Inspect area for any holes. Three rodents found in this area now and no others in any other trap. This indicates an area of high rodent activity.

Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation: 1) Rodent droppings found:
- On counter top under cutting boards
- On lower shelves of 2 of the 3 brown rolling racks
- On lower shelf of stainless steel grill storage unit
CORRECTED DURING INSPECTION - areas cleaned and sanitized with 200ppm Chlorine sanitizer, two cakes/loaves discarded during inspection as these were stored in this area, cutting boards cleaned and sanitized in dishwasher.

2) Sanitizer solution in all spray bottles and areas of kitchen found to be in concentrations of less than 200ppm. Sanitizer dispensing unit malfunctioning. Unit is dispensing sanitizer solution at concentrations of less than 200ppm.
CORRECTED DURING INSPECTION - 200ppm chlorine solution was created upon instruction of EHO. Surfaces re-sanitized with chlorine solution.

Correction: 1) Ensure all surfaces are sanitized prior to the start of the work day. It is evident that rodents are able to climb to counter height therefore staff can not assume the surfaces are in a clean and sanitary condition because they were cleaned and sanitized the previous night. Morning sanitizing of counters should be occurring due to severe rodent infestation.

2) Due to the severe rodent infestation it is critical that sanitizer solution is checked daily. Staff mentioned that she had informed Chef of malfunctioning unit however an alternative sanitizer solution was not obtained until directed by EHO. Ensure staff are adequately trained to 1) check sanitizer solution daily with test strips, 2) if machine malfunctions to alert Management, 3) Management to put immediate request to service provider for repairs, 4) Management instruct staff to dump all old sanitizer solution and switch to alternative until such time as sanitizer dispensing unit is repaired.

Ensure Management and staff discuss the issues found today. The facility has a severe rodent infestation and serves an at risk population. The lack of adequate concentration of sanitizer solution is unacceptable.

ITEMS CORRECTED:
- Pest proof containers for all dry goods in dry storage area have been obtained and are in use
- Cleaning has occurred
- Cooler unit has been repaired and now achieving temperatures of less than or equal to 4 degrees Celsius
- Sanitizer dispensing unit has been serviced and now achieves a sanitizer concentration of 200ppm QUAT straight from the unit

ITEMS TO BE CORRECTED:
- Door skirt along bottom of door leading to dry storage has been damaged/chewed resulting in a door that is no longer tight fitting at corner
- Rodent infestation ongoing and needs to be treated along with building. Pest Management company to treat entire building as well as kitchen space.
