Observation (CORRECTED DURING INSPECTION): Meat sauce in warmer is 7.1C surface temperature.
Unit is not turned on.
Operator said that they are about to boil the sauce on the stove.
Sauce is left at room temperature unattended while others are preparing pizzas.
Corrective Action(s): Please ensure sauce is being boiled past 74C and then placed into warmer at 60C.

Observation: Large rodent droppings found in mop sink area where there are lots of cans, staff washroom (not used), abundantly in corner under dishwashing area.
Corrective Action(s): 1. Clean and bleach mop sink area. Do not allow area to accumulate with cans.
2. Clean under dishwashing area.
Operator was brooming up the rodent feces during the inspection, thank you.
Make sure you bleach this area and wear a mask while cleaning.
Be sure to bleach broom as well so smells are not spread from place to place.
Install trap in this location.
Remove all garbage and food debris here and any pooling water.
Call pest control and monitor for activity.
Owner said that these could be old as several have been caught some time ago.
3. Staff washroom area needs to be thoroughly cleaned and sanitized. Remove all droppings and bleach this area.
