Observation (CORRECTED DURING INSPECTION): No chlorine detected in bucket of bleach water sanitizer (kitchen). Wiping cloths stored on counters.
Corrective Action(s): Bleach was added and free chlorine was measured at 200 ppm. Please ensure that bleach water sanitizer concentration is maintained at 100 to 200 ppm chlorine for effective sanitizing. Ensure that wiping cloths are stored in sanitizer solution when not in use.

Observation (CORRECTED DURING INSPECTION): 1. Ice scoop was stored within ice in ice machine. Ice scoop was removed at time of inspection.
2. Cloth was stored directly on noodles in front cooler. Cloth was removed.
Corrective Action(s): Ensure ice scoop is not stored within the ice as the handle may potentially contaminate ice. Store the scoop in a manner that protects from contamination.
Ensure that food is covered with a food grade covering (e.g. single use plastic wrap, lid) to protect from potential contamination.

Routine inspection conducted:

- Prep cooler at 3 degrees C (above) and 2 degrees C (below)
- Sliding door glass cooler at 3 degrees C
- 2 door cooler at 4 degrees C
- Sushi display at 4 degrees C or less
- Domestic cooler (front) at 1 degree C. Freezer compartment at -18 degrees C.
- Domestic cooler (back) at 1 degree C. Freezer compartment at -16 degrees C.
- White freezer at -22 degrees C
- Walk in freezer at -17 degrees C
- Hot holding internal temperatures (miso soup, rice) at 60 degrees C or more.
- Thermometers accurate to 1 degree C are available for cooler units. Probe thermometer available for hot holding. Note: Discussed calibration with owner.
- Hand washing stations (front, back) are supplied with hot and cold running water, liquid hand soap, and single use paper towels.
- Bleach water sanitizer (front) at 200 ppm chlorine.
- High temperature dishwasher measured 75 degrees C at utensil surface (minimum 71 degrees C)
- Ice machine maintained in sanitary condition
- No evidence of pest activity observed
- FOODSAFE requirements met at time of inspection
- Temperature records missing for December 2017 to January 2018. Records to be maintained from today and onward, as stated by owner.

Notes:
1. Garbage enclosure is partially complete--gates are in place and fence posts are installed. Fencing installation is pending.
2. New dry wall panel observed on kitchen ceiling. Operator stated that panel is to be painted. Please ensure that all food and utensils are removed from this area prior to painting. Properly cover any exposed equipment/surfaces and ensure areas are cleaned and sanitized prior to use.
