Observation (CORRECTED DURING INSPECTION): Equipment and utensils not sanitized for 2 minutues in 100ppm bleach solution at 3 compartment sink.
Corrective Action(s): Ensure all equipment, utensils, and dishes are washed, rinsed, sanitized in 100ppm bleach for 2 minutes then air dryed. This is as per your sanitation plan.

Observation (CORRECTED DURING INSPECTION): Staff washroom hand sink paper towel dispenser empty.
Corrective Action(s): Ensure during operation all hand sinks are provided with liquid soap and paper towels at all times.

Observation: Grease accumulations observed on exhaust canopy and back stainless section behind spits and fryer.
Corrective Action(s): Thoroughly clean and sanitize exhaust canopy and back stainless section. Correct by January 31, 2018.

Routine inspection:

Chicken donair cone assembled onsite and cooked from raw on spit. Frozen beef and lamb cones thawed in the walk in cooler then cooked on spit. All donair cones undergo a secondary cook step on grill then hot held at or above 60 degrees C. Reminder to always keep the spits rotating.

Refer to inspection Rpt # VCHN - APCPGG on end of the day procedures for meat leftover on spits. BCCDC guideline on the safe preparation of donairs/shawarmas onsite and available for staff to reference.

Walk in cooler at or below 4 degrees C.
Preparation coolers inserts and lower sections at or below 4 degrees C.
Hot holding at or above 60 degrees C.
Secondary cook step above 74 degrees C for 15 seconds on grill.
Rice hot held above 60 degrees C. Cooked fresh daily.
All freezers at or below -18 degrees C.
100ppm bleach available for use in container. Wiping cloths stored in solution when not in use.
100ppm bleach dispensed from chemical dispensing station.
FOODSAFE requirements met at time of inspection.

Temperature logs again not maintained on a daily basis.. Last entry October 18 to 25, 2017 on sheet posted on walk in cooler door. Additional temperature log sheets given to staff.
