Observation (CORRECTED DURING INSPECTION): Bucket of bleach sanitizer was measured approximately 10 ppm.
Corrective Action(s): Discard and refill bucket with newly prepared bleach sanitizer. Ensure sanitizer is prepared fresh often to maintain the concentration at 100 ppm. If the sanitizer is being used heavily, it must be changed more often. Date to be corrected by: Immediately

- Coolers (walk-in, sandwich prep) are at < or = 4C
- Walk-in freezer is at < or = -18C
- Hot holding units (gravy, rice, chicken) are at > or = 60C
- Three compartment sink is available for manual dishwashing
- Bleach sanitizer is temporarily being used until more Quat sanitizer is obtained. 100 ppm bleach sanitizer available at the three compartment sink and in bucket with wiping cloths (after correction).
- Ice machine is clean. Ice scoop is stored in a sanitary manner.
- No signs of pests observed during inspection
- Temperature logs are being maintained regularly
