Observation (CORRECTED DURING INSPECTION): Cooked bacon in metal bin stored at room temperature. Internal temperature measured at 27C. No time stamps or time logs available. The manager stated that cooked bacon is to be time stamped for max 6 hrs.

Comments

- General sanitation is good.
- All handwashing stations supplied with hot/cold running water, soap, paper towels.
- Three compartment sink available to manual warewashing. Sanitizer available at 200ppm QUAT concentration.
- High temperature dishwasher achieved 71C at the plate's level during the final rinse cycle.
- Surface sanitizer available in designated red buckets at 200ppm QUAT concentration.
- Dry storage area has adequate space and wire racks.
- No signs of pest activity. A third party pest control company inspects on a routine basis.
- FOODSAFE trained staff on duty. Verified at the time of the inspection.

Temperature control:
- All coolers (walk in, display, reach in undercounter) at < or = 4C
- Walk in freezer = -18C
- Beverage cooler = 9C. This is designated as a beverage cooler only.
- Thermometers available in all refrigeration units.
