Health permit valid and posted.
Hand sinks were stocked with liquid soap and paper towels.
Quat sanitizer in buckets measured 200 ppm.
Walk-in freezers were at -19 deg C.
Walk-in cooler was at 2-3 deg C.
Dishwasher final sanitizing rinse reached 74 deg C.
Prep line coolers and other coolers were at 3-4 deg C.
Hot holding for potato wedges, soups, chicken, beef, onions, etc. was 65 deg C or above.
Temperature log available on the tablet and the computer system.
-Ensure to check and record dishwasher temp. as well.
Staff wearing clean uniforms and hair restraint.
Staff washroom and public washrooms were provided with soap and paper towels.
General sanitation was satisfactory. Staff should clean as they go and sweep floors when necessary not just when there is a shift change.
Transport van was in sanitary condition. Baked good stored on racks and covered during transport to other location.
