Observation (CORRECTED DURING INSPECTION): Gravy, cooked rice, sauces cooled for an extended period at room temperature.

Observation: Some food debris noted in the cracks and crevices of the meat slicer. Scented bleach is being used on food contact surfaces. No sanitizer detected in the dishwasher rinse cycle.
Corrective Action(s): Ensure the meat slicer is completely taken apart for cleaning. Chemicals that is responsible for the scent may be incompatible with food. Use unscented bleach on food contact surfaces. Service the dishwasher and check with test strips daily. In the meantime, obtain unscented bleach to sanitize dishes manually.
