Routine inspection conducted at the food facility and the following observations were made during the inspection:

Note: Walk-in refrigeration units and storage area located downstairs.

Temperature:
- Temperature of walk-in coolers (dairy & regular) was maintained below 4C.
- Under counter cooler was maintained at 4C or less.
- Stand-up cooler at 0C.
- Cream dispenser at 2C.
- Temperature of walk-in freezer at -12C.
- Walk-in freezer (bakery) at -16C
- Undercounter freezer (red meat) at -6C.
- Temperature logs were maintained and found up-to-date.
** Ice build-up noted in cream dispenser and bakery freezer that may require defrosting/service.

Hygiene and Sanitizing:
- Hand wash station was adequately stocked with hot/cold running water, liquid soap, and single-use paper towels in front service area.
** DO NOT LEAVE dirty rags in hand wash station.
- Sanitizer spray bottle available and the concentration of QUATS noted at 200ppm.
** Provide sanitizer pail/bottle in the cafe area.
- Sanitizer dispenser releases 200 ppm QUATS at 3-compartment sink.
- Low temp mechanical dishwasher dispenses chlorine at 50ppm.
- Ice machine well maintained. No grime/mould observed at the time of inspection. Scoop was stored outside in a sanitary manner.
- General sanitation of facility is good.
- Washrooms maintained in good sanitary condition with supply of hot/cold running water, liquid soap and single-use paper towels.

Storage:
- All food items were stored at least 6" off the floor.
- All products were either in original packaging or covered inside coolers.
- Storage area was well-organized.
- Chemicals and cleaners were stored separate from food preparation areas.

Pest Management:
- Professional pest control company conducts routine checks.
- No visible signs of pest activity observed at the time of inspection.
- Mechanical traps were present throughout the facility.

Administrative:
- Operating permit was posted in a conspicuous location.
