Comments

Routine inspection conducted:

-Handwash stations adequately supplied with liquid soap, paper towels and hot/cold running water.
-Coolers operating at/below required temperature of 4'C; Freezers operating below required temperature of -18'C.
-Temperature monitoring system in place.
-200ppm chlorine solution available in buckets to hold wiping cloths.
-Low temperature dishwasher achieved the minimum required chlorine concentration at the plate level after final rinse.
-Ventilation canopy hood serviced and maintained.
-Traps in place. Professional pest control company contracted.

General sanitation satisfactory but could be improved by cleaning hard to reach areas on a more regular basis.

NOTE: Ensure all cooked food is cooled from >60'C to 20'C within 2 hours and from 20'C to 4'C within the next 4 hours. Use a probe thermometer available to check the temperature.
