Observation (CORRECTED DURING INSPECTION): - Numerous wiping cloths noted in use and on counters with no sanitizer residual detected
- 0 ppm quats sanitizer detected in solution in bucket. Time indicated solution should have been replaced 15 min prior.
Corrective Action(s): -Store wiping cloths in sanitizer solution. Test sanitizer solution to ensure concentration is adequate (200ppm quats). Replace solution as per sanitation plan. Solution should be replaced more frequenty if it appears dirty.

-General sanitation was satisfactory although some attention needed to clean floor around edges of equipment and grease trap to ensure build up of dirt/debris does not form.
-Handsinks supplied with liquid soap and paper towel
-Cooler temperatures were adequate:
-Prep cooler top/bottom 3C/2C
-Undercounter cooler 4C
-Walk-in cooler 4C
-Milk/cream dispensers were holding product at 4C or colder
-Back (outdoor) walk-in freezer was -20C
-Upright freezer was -16C
-Hot holding was >60C
-Chicken noodle soup was 63C
-Potato wedges were 71C
-Quats sanitizer (200ppm) available from dispenser at dishwashing sink
-Only cups/paper products stored in outdoor storage unit. *Keep door to storage unit closed as per previous routine inspection.
-No signs of pest activity noted at the time of the inspection
