A routine inspection conducted at this date

Main kitchen
- Hand washing stations fully supplied with hot/cold running water, liquid soap and paper towels. Please ensure after entering kitchen hand wash first then pick up any task. Gloves are to be changed between tasks.
- Walk in freezer measured at -24C. Food frozen to the touch. Walk in cooler measured at or below 4C. Food noted covered and stored properly. Temperature monitoring log maintained. All other coolers measured at 4C or colder.
- Hot holding unit measured at 60C or hotter.
- Sink and Surface Sanitizer available throughout food prep area and measured in 272-700 ppm range. All sanitizer red buckets are to be properly labeled.
- Mechanical high temp Dishwasher registered at or above 71C at the dish surface in final rinse cycle. Proper handling of clean and dirty dishes noted. Proper flow of dishware handling in place.
- 2-comp sink and a 3-comp sink available and maintained.
Front area:
- Hand washing stations maintained.
- Proper Clean utensil storage noted.
- Coolers measured at or below 4C. Hot Dipper well for butter scoop maintained hot water aboce 60C. Cold dipper well noted with running water and clean.
- Sanitizer available in the front.
General sanitation is satisfactory.
- No obvious sign of pest activity noted at this date.
- Customer washrooms maintained.
- Staff washrooms maintained.
- Mop room maintained. Mop bucket noted empty when stored in mop room. Ensure no water in mop room to prevent potential pest.
- Dining room noted clean and well maintained. Sanitizer is to be used to clean tables and chairs.
- Hard surfaces and equipment faces noted generally clean. Some high touch areas are to be wiped down with sanitizer or be cleaned more frequently. This was discussed with manager.
