Follow-up Inspection:

-Operator has purchased an ice wand to assist in cooling of broths/soups -cooling directions have been posted at 2-door stainless in kitchen -additional cooling wands will be purchased as well -have your cooling wand ready for use for tonight's leftover congee
-Cleavers stored in clean containers
-Handwash sinks well stocked and cleared for use -problematic paper towel dispensers: the black covers have been removed for easier access
-No pooling and storage of eggs observed -operator is leaving them whole and immediately cooking when cracked open
-Dry storage area cleaned
-Live seafood/fish tanks cleaned
-no open canned goods and storage observed
-lights have shielding in Walk-in cooler and dry storage room
-no improper thawing of frozen perishables observed
-Seals between 2-compartment sinks replaced
-Fetal Alcohol signs posted in public washrooms

-NOTE: operator may install a screen door for the back -It must be flush against the door frame and small enough mesh size to prevent pest entry
-NOTE: ensure all cooks review the Pooling Egg Guideline translated in Chinese
