302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)] Observation (CORRECTED DURING INSPECTION): Inquired staff about manual warewashing at three compartment sinks. Staff informed that after washing in the sink, items are hosed down with water before sanitizing in the third sink. No water present in the second/rinse sink. Corrective Action(s): The second/rinse sink must be filled and items must be fully immersed inside to rinse off the detergent as per Subway warewashing sign behind wired racks on wall. Please follow the proper procedures and post the sign in a conspicuous location so all staffs can refer to it. Violation Score: 5

General: Handsink: soap, paper towel, hot & cold running water available; air dryer used in washroom Toppings cooler: 2-4C (several items such as tuna salad, chicken strips, pepperoni, sliced tomatoes etc. were probed) Walk-in cooler: 3C Walk-in freezer: -16C Pizza sauce: 62C Meatballs: 64C Soups: 64 to 72C Pop/milk coolers: 4C Quats sanitizer in spray bottle at 200ppm Test strips onsite Tomato slicer being used at time of inspection and the other slicer dried on rack appears to be maintained in sanitary condition General sanitation is good Food storage is adequate Temperature logs are up to date No apparent signs of pest noted during time of inspection ****Note: occupancy limit posted by City of Burnaby indicates limit of 10 people, 15 seats were counted in the restaurant. Please remove seats accordingly or contact the city if you would like to increase seating.
