Observation (CORRECTED DURING INSPECTION): No sanitizer was available in front sandwich prep line area at time of inspection. Sanitizer bucket was empty.
Corrective Action(s): Ensure sanitizer solution is always available for use during operational hours. Staff stated they had emptied the bucket after the lunch rush and forgot to refill it as the facility had been very busy all day. Corrected at time of inspection; 200 ppm quats detected.

Observation (CORRECTED DURING INSPECTION): Three bags of onions were stored on the floor in back kitchen area at time of inspection.
Corrective Action(s): Staff stated the onions had just been delivered today and they had no time to put them away yet. Corrected at time of inspection.

Comments

- Hand washing stations were supplied with hot and cold running water, liquid soap, and paper towels
- Quats sanitizer available at 200 ppm from dispenser at 3-compartment sink. Quats sanitizer also available in spray bottle in back storage area.
- Walk-in cooler and all display and prep coolers were measured to be at or below 4C
- Walk-in freezer was measured to be at -14C
- Hot held food items (soups and meatballs) were measured to be at or above 60C
- All refrigeration units equipped with accurate thermometers
- Temperature logs well maintained and up to date
- Food stored covered and in containers - good
- General sanitation OK - ensure floors are cleaned at end of each day
- No signs of pest activity noted at time of inspection
- FOODSAFE certified staff on-site
- Proper glove use and hand washing by staff observed at time of inspection
