Observation (CORRECTED DURING INSPECTION): Soup made today was cooling in the walk-in cooler with an ice wand and was at 75C. Ice wand was mostly melted
Corrective Action(s): Hot potentially hazardous foods must be cooled from 60C to 20C in 2 hours or less and from 20C to 4C in 4 hour or less to prevent the growth of pathogens and or the formation of toxins. To rapid cool foods, the following methods can be used: ice wands, mixing, ice/water bath. Soup was transferred to an ice/water bath at the time of inspection. Rapid cooling can also be achieved by placing the food into the walk-in freezer.

Comments

-Follow-up inspection to June 17, 2020.
-Hot holding of chicken was greater than 60C. Continue to monitor hot holding unit and adjust as needed.
-Facility has obtained new manual slicer, which do not have removable parts. Blade is affixed to the slicer and raised, allowing for proper cleaning and sanitizing. Slicer was found to be clean and sanitary.
-General food storage practices were good at the time of inspection. Raw meats were stored below ready-to-eat foods and scoops were stored in a sanitary manner.
-Sanitizer pails were properly labelled. Ensure containers are relabelled as needed.
