Routine inspection is conducted: - Handsink is supplied with hot and cold running water, liquid soap and paper towel - All coolers - prep cooler, display cooler and storage coolers are less than 4C - Storage freezers are less than -18C - Hot holding unit for soups is not in use. NOTE: Ensure that temperature is maintained at greater than 60C - Sanitizer solution for food contact surfaces is available in a bucket and concentration is measured at 100ppm chlorine residual - High temperature dishwasher is measured at 78C during final rinse at dish level - No evidence of pest activity is noted - Foodsafe level 1 equivalent training is verified. - General sanitation is satisfactory
