203 - Food not cooled in an acceptable manner [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): Four large (15L) buckets containing cooked onion gravy were observed at room temperature. Internal food temperature: 37 degrees C. It was stated that onion gravy was cooked last night and was now cooling. Inspection conducted at approximately 12:30 PM.
Corrective Action(s): - Operator added a large quantity of bleach to each of the buckets, under the direction of the Environmental Health Officer, in order to prevent the food from being served to the public as it could not readily be discarded at the time of inspection.
- Potentially hazardous food must be cooled from 60 degrees C to 20 degrees C in two hours or less, then from 20 degrees C to 4 degrees C within the next four hours or less (total time: 6 hours) in order to limit the growth of potential pathogens, including the potential formation of heat-resistant toxins. Resources on cooling (BCCDC) to be provided to operator which includes potential methods to be used to facilitate rapid cooling.

Observation (CORRECTED DURING INSPECTION): Vegetable chopper was stored with food debris.
Corrective Action(s): Vegetable chopper was cleaned and sanitized during inspection. Ensure equipment and utensils are stored in sanitary condition to prevent potential contamination of food. Equipment and utensils are to be cleaned and sanitized following each use, and before storing away.

Observation (CORRECTED DURING INSPECTION): - Bleach water was observed being prepared upon arrival of the Environmental Health Officer
- No sink plugs available for three-compartment sink
Corrective Action(s): Ensure a food contact surface sanitizer is available for use at all times during operations. Bleach water sanitizer measured 100 to 200 ppm chlorine in containers. Wiping cloths stored in containers when not in use. Ensure food contact surfaces are cleaned then sanitized to limit potential contamination of food.
Operator purchased three sink plugs during inspection. Sink plugs fit. A bleach water sanitizer was prepared in the sanitizing compartment at 100 ppm chlorine. Ensure all equipment and utensils are sanitized.

Observation (CORRECTED DURING INSPECTION): Raw chicken stored (on metal tray) on top of pizza sauce bin (covered) in walk-in cooler.
Corrective Action(s): Ensure raw animal products (including meat and eggs) are not stored above ready-to-eat foods as they may potentially contaminate food below. Raw chicken was moved to the lowest shelf, next to other raw meat products in the walk-in cooler.

304 - Premises not free of pests [s. 26(a)]
Observation: What appeared to be rodent droppings were observed on the floor under a rolling rack (near back door) and on the floor to the right of the three-compartment sink. Note: No damaged or contaminated food product or food equipment/utensils observed.
Corrective Action(s): Ensure droppings are properly cleaned and floor is disinfected (recommended: 1 part bleach to 9 parts water). Operator to contact pest control to help address rodent concern. Date to be corrected by: December 6, 2023.

305 - Conditions observed that may allow entrance/harbouring/breeding of pests [s. 26(b),(c)]
Observation: - Large hole observed in wall at floor level, to the right of the back door. Small pieces of foam observed around hole.
- Accumulation of debris and oil in several areas of premises, including hard to reach areas under tables/equipment, floors, counters, shelves, etc.
Corrective Action(s): - Ensure hole is properly sealed to prevent potential pest entry. Use an appropriate material to seal the hole that is resistant to pest entry. Date to be corrected by: December 7, 2023.
Note: Operator stated that pest control has been on site and has stated that hole is not due to rats or mice; he believes squirrels may have entered the premises. Operator unable to provide pest control report.
- Ensure entire premises is deeply cleaned to remove food, oil, and other debris. Food, oil, and other debris may potentially attract pest activity. Date to be corrected by: December 12, 2023.
