Observation (CORRECTED DURING INSPECTION): Record keeping for two hour time stamping not in use. Facility not currently using time tracking methods for tracking potentially hazardous food items stored at room temperature in burger preparation. Sliced tomatoes found to be at temperatures of 4 degrees Celsius as they were on ice however remaining items were at temperatures greater than 4 degrees and not time recorded.

- Hot Holding achieving temperatures of greater than or equal to 60 degrees Celsius
- Dishwasher achieving final sanitizing rinse of greater than or equal to 71 (73.4) Degrees Celsius at the dish
- Sanitizer solution from dispensing unit at concentrations of greater than or equal to 200ppm QUAT
- Test strips available for use
- Raw meat stored away from Ready to Eat food items
- First In First out and date stamping methods observed in use

NOTE: Marketplace was not operational at time of inspection due to closure of restaurant in two days for holiday break

NOTE: Facility is still having ongoing issues with janitorial staff not cleaning properly under equipment and in hard to reach areas. Ensure discussion with janitorial staff in regards to proper cleaning under equipment.
