Observation (CORRECTED DURING INSPECTION): Obsevred insert cooler in the kitchen at 14-15 C. Explained to the operator that all cold potentially hazardous foods must be held at 4 C or lower and time at 4 C or higher must not exceed 2 hours accumulative. Under the insert cooler was a metal, removable, metal piece that prevents cold air from rising.
Corrective Action(s): Required operator to remove all items from insert cooler and place them into a cooler at 4 C or lower. If any perishable items were kept in that insert for more than 2 hours, they must be discarded immediately. Required operator to remove the metal piece to ensure proper air flow is provided to the insert portion.

Observation (CORRECTED DURING INSPECTION): Observed scoops kept inside various dry products inside the bins.
Observed a few open dry products not kept in pest-proof containers
Items without proper covers noted throughout facility
Corrective Action(s): Required operator to keep scoops out of the food bins and/or put a clean and sanitized holder to hold all scoops for each bins. Operator must provide pest-proof bins to hold opened dry products and provide covers for all products in the premises.

Hot and cold running water available at all sinks
QUAT sanitizer available and in use; detected 200 ppm of QUAT
High temperature dishwasher in good working order; detected 81.7 C at plate level after final rinse cycle
All coolers at 4 C or lower; all freezers at -18 C or lower. No hot holding unit at the time of inspection. Freezers require defrosting to ensure that proper air flow is provided.
Ice machine kept in sanitary condition
Washrooms maintained in sanitary conditions.
