Observation (CORRECTED DURING INSPECTION): * Spoons were found in hand sink AGAIN and this is unacceptable practise; food equipment NOT to be stored in hand washing sinks as hand sinks are for hand washing only; ice cream bucket was found uncovered in freezer chest and this can lead to cross contamination
Corrective Action(s): * Ensure hand washing stations free of food equipment and keep these free of equipment at ALL times; Ensure all ice cream buckets covered and protected from contamination at all times

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: * Build up of grime/debris found through out on cooking line under food equipment, drawers, legs, wheels, vent filters, etc.; Also, build up of grime/debris found along floor baseboards and other food equipment areas through out front service area and catering side that requires additional cleaning and maintenance daily/weekly, etc.: Also, ceiling vents were found to be dirty and require cleaning
Corrective Action(s): * Ensure all areas properly cleaned and sanitized including food equipment, shelving, walls and sides of equipment, filters, baseboards etc. as required per food regulations section 17; maintain sanitary conditions; Clean all ceiling vents regularly to remove build up of debris, etc

Comments

* Dishwasher final rinse was 50 ppm chlorine residual at plate surface
* Cold-holding units were 4'C/40'F or colder except some on the cooking line and front line salad prep station that require adjustment
* Monitoring records were available; update cleaning records to include additional cleaning duties on cooking line, etc., (eg. vent filters, etc)
* Freezer units were -18'C or colder
* Note: cleaning to be done through out facility under food equipment, vent filters, ceiling vents and baseboards
* Sanitizer was available and at 200 ppm quaternary ammonium concentration
* Follow up inspection to be done end of November
