Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: High temperature dishwasher offline, not in use.
Correction: High temperature dishwasher is to be repaired to provide a sanitizing cycle that meets or exceeds 71 C at dish level.

Until repaired all food served to customers is to be conducted using single use dishware and utensils only. No use of resuable mugs, dishware or cutlery.

Until repaired all food utensils and food equipment are to be cleaned and sanitized within the 3 compartment sinks.

Food equipment, food utensils and clean in place food contact surfaces must be manually cleaned and sanitized following the 4 step method;
1)clean surface of debris using warm water and detergent,
2)rinse surface with warm water,
3)immerse for 2 minutes or apply surface sanitizer solution 200 ppm Quaternary Ammonia,
4)allow surface of item to air dry before next use.
Comments

High temperature dishwasher has been serviced, sanitizing temperature 75 C achieved during cycle.

Handsinks are fully accessable for staff to use.

Kitchen back door sweep has been replaced to discourage pest entry.

Required premise cleaning has been conducted.

Correction Order has been complied with and now rescinded.
