Corrective Action(s): Dilute the bleach sanitizer to 100 ppm. Ensure bleach sanitizer is prepared by mixing 1/2 teaspoon bleach per 1 L clean water. Date to be corrected by: Immediately

Observation (CORRECTED DURING INSPECTION): Walk-in cooler was maintaining ambient temperatures of 6-7C.
Corrective Action(s): Repair or adjust the walk-in cooler so the ambient temperatures are 4C or less. Date to be corrected by: Immediately
*Operator adjusted the setting during inspection and temperatures dropped to 4C.

- Hand washing stations are equipped with hot and cold running water, liquid soap, and paper towels
- Coolers (walk-in, prep, drink) at < or = 4C
- Chest freezer at < or = -18C
- Pizza warmer at > or = 60C
- Three compartment sink available for manual dishwashing
- 100 ppm bleach sanitizer available in spray bottle (after correction)
- Pizzas are discarded from the warmer unit after 1 hour
- No signs of pests observed during inspection

*Temperature logs have not been maintained since the start of November 2018. Ensure the temperature logs are maintained from now on.
*Obtain chlorine test strips for measuring sanitizer concentration.
