Corrective Action(s): Purchase a flashlight to verify cleaning has been done properly and ensure all staff have been trained on how to clean the meat slicer

Observation (CORRECTED DURING INSPECTION): Dishwasher final rinse sanitizer concentration observed to be 0ppm chlorine. Once bottle was switched and unit primed final rinse was observed to be 100ppm.
Corrective Action(s): Operator ordered to rewash everything as dishwasher monitoring logs were not being maintained. Chlorine test strips for monitoring are on site.

Open grained wood surfaces must be properly sealed. This can be achieved by repainting.
