Observation (CORRECTED DURING INSPECTION):
All food items stored in the slide-door cooler in the kitchen measured & probed at temperatures above 4C. The temperatre ranged from 6.8C to 18C.
Corrective Action(s):
Discard all potentially hazardous food including: prepared imitation crab, marinated chicken, marinated beef, partially cooked beef, vegetable tempura, spring rolls. Operator discarded the noted items at the time of inspection. Other non potentially hazardous foods such as whole vegetables and sauces were moved to other working coolers that are capable of maintaining stored food at 4C or below.

Observation (CORRECTED DURING INSPECTION):
Ice machine observed with significant build up of mould on the interior surface.
Corrective Action(s):
Stop serving ice immediately. Turn off the ice machine; empty the ice machine. Remove all mould, clean and sanitize all surface before turning back on. Operator may start serving ice once these steps have been taken.

Observation (CORRECTED DURING INSPECTION): No liquid hand soaps were equipped at the front & back handsinks.
Corrective Action(s): Operator refilled the soap dispenser at each hand sinks. Ensure to always have liquid soap in a dispenser and disposable paper towels at all hand sinks to facilitate frequent handwashing.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation:
- Vent hood observed with grease build up.
- Floors observed with food debris and oily residue.
- Slide door cooler in the kitchen appears dirty and has sticky residue on surfaces, dust build up on fan covers (inside) and metal panels (bottom front).
- Rice bin lid is dirty and broken.
Corrective Action(s):
Clean all the items noted above, especially hard to reach areas such as underneath coolers and cooking units. Ensure there are no holes/openings on the rice bin lid. A smaller rice bin is recommended to accommodate small kitchen space.

Observation:
- Slide door cooler inside the kitchen not capable of maintaining stored food items at 4C or below.
Corrective Action(s):
- Repair the unit so it can maintain all stored food items at 4C or below.

Comments

High temperature dishwasher measured at 71C or above at plate level during the final rinsing cycle.
Chlorine sanitizer in bucket (front & back) measured at 200ppm with test strips.
Hot held miso soup measured at 60C or above.
Washroom handsinks fully equipped.
All freezers ranged from -14C to -7C.
All coolers except the slide door cooler (note violation code 205 & 308) measured at 4C or below.

*Operator agreed to time track pre-fried tempuras. Once tempuras are deep fried in batch, record the time the preparation was done and after two hours or less being cooled in room temperature, the rest can be cooled in cooler. Once the tempuras are cooled down, they cannot be held in room temperature again but used immediately once taken out of the cooler.
*Inspector noticed that the menus taken off as per last compliance meeting is back on the menu. Operator will need an approval from the inspector in order to offer these menus again. Ensure to remove the following menus in the physical menu provided to dine-in customers as well as online menu offered in delivery apps such as Uber Eats:
