Ensure 3 step process for dishwashing is followed. Always measure the proper amount of bleach for the sanitizing sink and the cloth bucket. Verify the proper concentration or PPM is still available after 2 hours with the test strips. Test strips on hand - good.

Make sure handsinks are always stocked with liquid soap and paper towels (front sink running low). OK.

Cooling units less than 4 C. Freezers OK - 18 C.

General cleanliness is OK.
